Bored of potato soup? Me too, until I found this Egyptian red lentil soup recipe.
The Taste:
This recipe reminded me a thick, lush, and refreshing potato soup. The red lentil base gave the soup a sweetened earthy flavour which was accompanied by the citrus sharpness of lemon juice. If you don’t enjoy a strong lemon flavour, you can reduce the amount used in the recipe. This soup can be a meal on it’s own, because although it is refreshing, the potatoes and lentils will fill you up quickly!

The health benefits of lemons are under appreciated. There is nothing better than having a warm glass of water with a few squeezes of fresh lemon juice. Warm water with lemon juice can relieve constipation in some people and provide a much needed sense of calm to our bodies. Lemons are also high in Vitamin C, which can aid with boosting our metabolisms and strengthening our defenses against getting a cold or the flu. Not to mention, Vitamin C plays a role with giving us healthier looking skin. So when you feel your next cold coming, or just need to feel more at ease, don’t forget about lemon juice. We could all use a little more zest in our lives, so get squeezing!
