- 6 hard-boiled eggs
- 1/3 cup Greek Yogurt
- 1/3 cup Babaghanoush
- 1 tsp of yellow mustard
- A pinch of paprika or cayenne pepper
- Salt and pepper to taste
1. Mash the hard boiled eggs in a bowl. Combine the rest of ingredients in the same bowl as the eggs.
2. Refrigerate for 30 minutes and then serve on bread, crackers, or cucumbers. Enjoy!
