I am always looking for new egg salad sandwich recipe. I had leftover Babaghanoush one day, and then my recipe came to be! Enjoy!eggsalad2



  • 6 hard-boiled eggs
  • 1/3 cup Greek Yogurt
  • 1/3 cup Babaghanoush
  • 1 tsp of yellow mustard
  • A pinch of paprika or cayenne pepper
  • Salt and pepper to taste


1. Mash the hard boiled eggs in a bowl. Combine the rest of ingredients in the same bowl as the eggs.

2. Refrigerate for 30 minutes and then serve on bread, crackers, or cucumbers. Enjoy!
