- 1 can white beans (rinsed)
- 1 pint of cherry tomatoes (halved)
- 4 scallions (thinly chopped)
- 2 Tbsp olive oil
- 1 Tbsp lemon juice
- Salt and pepper (to taste)
Directions: Combine all of the ingredients together and let sit for at least 30 minutes before serving.

Our dietary habits during the holidays change, and in most cases, they don’t get better. We are tempted by the sweets, large quantities of turkey, and of course, wine. We have room in our diets to eat these things, but we also need to make it easy for ourselves to make healthy choices. Preparing salads (such as the recipe above) and leaving them in the fridge for a quick snack or healthy side to a meal is a great way to surround yourself with healthy food options.
