This soup is as sweet as they come. The coconut milk brings out the sweetness of the carrots and gives the soup a rich texture. But this soup has a mildly spicy side that comes through in middle of each spoonful. The combination of ginger, garlic and the variety of spices from the red curry paste make your taste buds go back for more. A pleasant apple aftertaste makes you wonder if you just ate a dessert or a soup. This is one of my favourite soup recipes of all time. Enjoy!Recipe (Makes 6 bowls):
2 Tbsp Olive Oil
1 Onion, chopped
1 (14oz) can of coconut milk
1 apple, peeled and cored
2 1/2 cups broth
2 cloves of garlic
1 tsp ginger
1-2 tsp red curry paste
