When I say this is one of the best recipes for butternut squash soup I have ever tested, I really mean it. This recipe is so good, my MEH told me I could make it anytime I wanted and he would be happy. What? No complaints about a vegetable soup?
Every spoonful took me back my time spent in Thailand, where the food is sweet, spicy, and contains all things coconut! The red curry paste prevented the soup from tasting overly creamy and the coconut milk made the consistency thicker than milk. I couldn’t get enough.
