My latest food obsession, and I am serious it’s an obsession, is with beets. Even though they stain my clothes, my cutting boards, and my hands, I love them. I found an interesting, Moroccan inspired beet and carrot salad recipe that you will love!

The Taste
The salad had similar taste elements to that of a semi-spicy chicken biryani. It has deep undertakings of cumin and cinnamon, all the while having a sweet paprika aftertaste, followed by pleasant bites of golden raisins. I get a similar aftertaste eating a oatmeal raisin cookie. Beets have a natural sweetness to them, but the raw carrots help to level out the sweet taste of the salad. It would go perfectly with some chicken and a good looking date! ha!

Its about balance . . .
Beets contain betaine, a compound that has been shown to support the immune system, liver, and ward off inflammation in the body (a risk factor present in chronic diseases such as heart disease). Many athletes have also starting to drink beet juice because it contains nitrates (which are converted to nitrites in the body after consumption) and have been shown to improve blood flow. Studies show that nitrate rich vegetables, such as beets, celery, rhubarb, arugula, and Swiss chard, can lower blood pressure and thus have a positive impact on cardiovascular health. Do you really need to me say it again? Ok, I will. Eat your veggies!!!!
