Start your new year off with a little luck by serving lentils! In some countries, like Italy, there is a belief that lentils symbolize wealth because they look like coins. Thus, the more lentils a person consumes, the more wealth they will have. Whether you believe foods are lucky or not, why take the chance? Enjoy my recipe below!

Recipe:

  • 1 Tbsp olive oil
  • 3/4 cup red lentils
  • 6 cups of chicken stock (you can also use vegetable if you prefer)
  • 4 medium carrots (chopped)
  • 1 large onion (chopped)
  • 4 cloves of garlic (minced)
  • 1 Tbsp ginger (minced)
  • 1 tsp cumin (ground)
  • Pinch of salt and pepper
  • 1 tsp of cinnamon (optional)

Directions
1. In a large soup pot cook carrots,onions, garlic and ginger until onions are caramelized (takes about 10 minutes). Add in cumin, cinnamon, salt and pepper. Fry for about 1 minute.
2. Add stock and lentils and bring pot to a boil. Once boiling, reduce to low-medium heat and let cook for 20 minutes.
3. Let cool for about 1 hour and then in batches transfer soup to a blender/food processor. Blend the entire batch of soup and serve with a dollop of yogurt or sour cream. Enjoy!
