Every year my dad makes chocolate covered strawberries for my family to enjoy after Christmas dinner. I had some extra chopped pistachios from my last blog post, so I thought I would sprinkle them over some chocolate covered strawberries, giving them an extra touch of colour! Chocolate covered strawberries are a fast, easy to make, and gourmet looking dessert. 
How to make these strawberries:
1. Clean and wash strawberries. Pat the strawberries dry with paper towel.
2. Line a baking tray with waxed or parchment paper or aluminum foil.
3. Melt dark chocolate (70% cocoa) to a saucy consistency (If you are using the microwave to melt the chocolate, watch the chocolate closely to ensure it doesn’t burn).
4. Grab a  hold of the stem (leaves) of a strawberry. Imagine the strawberry has four sides, like a box. Start dipping one of the sides in chocolate, then the next side, then the next side, and then the final side (until the strawberry is completely covered with chocolate).
5. After the strawberry is covered in chocolate, place it on the lined cooking tray.
6. Sprinkle the coarsely chopped pistachios over the strawberries while the chocolate is still warm.
6. Place the strawberries in the refrigerator for at least 1 hour before serving. Enjoy!Tip: You can also add coconut flakes if you want to make this treat even more festive! 
Remember to always leave some strawberries plain, so that if guests want to enjoy the fruit without the chocolate, they are free to do so!
